Purple Cabbage
Question: Is purple cabbage the same thing as red cabbage? I bought a small round, purple orb of cabbage from the grocery store and they'd labeled it "Red Cabbage." But I have a recipe calling for "purple cabbage." So, are they the same thing?

Question: Can I use purple cabbage leaves to relieve engorgement during weaning or does it have to be green? My son has turned one and we are done nursing. I slowly weaned him over the past month dropping one feeding each week. Now I haven't fed him in over 48 hours and my breasts are really sore, hard and engorged. I have heard of the cabbage leaves....but all websites say green. Can I use purple? I have some in the fridge right now or will only green work?

Answer: there is little nutritional difference between the red and green varieties of cabbage. the red variety tends to take longer to mature in the garden, and as a result is a little tougher than the green or white varieties. all cabbage varieties are extremely healthful, good sources of vitamin c (the white variety has the same amount of vitamin c per serving as lemon juice), and terrific sources of dietary fiber. if you cook the red variety, you will need to add a little acid to the water to keep the "red" color, otherwise it turns blue. try using it raw in cole slaw recipes, shredded raw instead of lettuce as a taco topper, or the old standard, stewed with meat (corned beef & cabbage with potatoes is a favorite in our house).

Answer: Title: Turkish Borscht
Categories: Soups, Vegetarian, Vegetables
Yield: 6 servings
1 tb Safflower Oil
2 Red Onions, chopped
3 Cloves Garlic, chopped
1 lb Raw beets, chopped
2 c Shredded cabbage
2 Stalks Celery, sliced
2 md Potatoes, diced
1 md Green or red pepper, chopped
2 qt Water or Vegetable stock
1/2 lb Tomatoes, chopped
Sea salt and pepper to taste
1/2 ts Dill seeds, crushed
Juice of one lemon
3 tb Chopped fresh dill
1 c Plain low-fat yogurt
Heat oil in a large heavy-bottomed soup pot and add onion and garlic.
Saute for a couple of minutes and then add the other vegetables, dill
seeds, salt and pepper. Cook, stirring, for another minute, then add
water or stock. Bring to a boil, cover, reduce heat and cook for 1
hour.
Remove 2 cups from pot and puree in a blender or put through a food
mill. Return to soup pot. Correct seasonings.
Serve, topping each bowl with a spoonful of yogurt.

Authentic Russian Borscht (Borsch, Borshch) Cabbage Beet Soup Recipe
* 1/2 head fresh green cabbage
* 1 medium beet
* 2 potatoes
* 1 medium carrot
* 2 small onions
* 2 cloves garlic
* 2 TBSP vinegar (acidity 3%)
* 2 TBSP tomato paste
* 1 TBSP fresh dill
* 2 TBSP fresh parsley
* 2 bay leaves
* 3 peppercorns black pepper
* 70-80 g vegetable oil
* 3 lt vegetable stock
* 2 TBSP sugar
* salt and freshly ground black pepper, to taste
1. Wash the beet and peel it. Do not throw away the skin. Cut the beet into julienne. In a large pan heat some oil, add the beet and cook until half done. Add 1 tablespoon of the tomato paste and stir, keep cooking for 3 to 5 minutes. Add 100 grams of the stock and cook for 10-15 minutes. Take off the stove.
2. Put the saved beet skin in a small saucepan. Add two cups of water and some sugar. Cook over medium heat for 15-20 minutes. At the end add 1 teaspoon of the vinegar. Strain and discard the beet skin and save the liquid.
3. Cut the onions and the carrot into julienne, heat some oil in the pan and cook the vegetables until half done, add the rest of the tomato paste, stir, cook for 5-7 minutes.
4. Slice the potatoes, shred the cabbage and finely mince the garlic.
5. In a large heavy pot boil the rest of the stock, add the bay leaves and the peppercorns and cook for 2-3 minutes. Add the potato slices together with some salt, return to boil and cook for another 2-3 minutes. Add the shredded cabbage and cook on a medium heat for 8-10 minutes. Add the beet and cook for 3-5 minutes. Add the carrot and the onions, return to boil. Add the liquid left from boiling the beet skin and cook for 2-3 minutes. Add sugar, salt, ground black pepper, finely chopped dill and parsley and the garlic. Bring to a boil. Add the rest of the vinegar.

Hints for the Vegetarian Russian Borscht Cabbage Beet Soup Recipe
The vegetables should be just a bit undercooked.
Do not let the liquid to boil after you add the vinegar.
Borscht should have a sweet and sour taste and a bright, intense color.
It is the best to eat the soup 1-1.5 hours after it is done.
This borscht recipe is a vegetarian one, but you can use a beef or a chicken stock as a base instead.

Answer: Fibre do help you lose weight - I guess this is kind of true. Although, you may get fibre from a vareity of sources, almost all fruits and vegetables contain lots of fibre as does whole cereals.
I recently lost some weight, the things that helped me the most are regular exercize and reduced sugar intake.

Answer: The cabbage, baby carrots, yellow bell pepper, broccoli, and onions can be used to make a veggie type stir fry. Or you could small dice all ingredients, toss together, and make a dressing using the ketchup, mustard, and a thinner.

Question: Can I use the outer leaves of a growing purple cabbage for cooking? I have a huge ( about 2 1/2 foot cabbage including outer bottom leaves in my garden. I have been breaking off the lower leaves,( about one and 1/2 foot each ) and throwing them away to let my lettuce get more sun. It's organic. Can I shred it and use it? And if so, ??? How would I cook it???

Answer: You could eat them but they would not have the good crunchy texture of the inner leaves... If you really want to use them try cabbage soup... i don't see anything wrong with it, and they have lots of recipes for it online. congrats on the huge plant!

Answer: Ingredients Red Cabbage and Apples
1 small red cabbage, cored and thinly sliced
3 medium apples, cored and grated
1/2 cup red wine vinegar
3/4 cup sugar
1 teaspoon ground cloves
1 dash red pepper flakes (optional)
1 cup cooked crumbled bacon (optional)
Directions
Combine cabbage, apples, red wine vinegar, sugar, cloves and pepper flakes if using, in slow cooker.
Cover and cook on High 6 hours.
stirring after 3 hours.
Sprinkle with bacon, if desired.
Question: what color does a purple cabbage indicator turn an acid and a base.? Does it have to always change colors? Thanks a bunch for any responses.
Answer: The color changes from reddish-purple to a yellow-green color. My recollection is that the acid reaction is green, while the base reaction is reddish. Color change will only occur when the pH passes the threshold for the indicator. So a mild acid might not cause a color change if that acid is not strong enough to drop the pH below the threshold.
Incidentally, this is somethnig you can easily answer for yourself if you have access to a red cabbage. Chop it up in a blender, boil the pulpy mass, and pass the liquid it through a filter, then let it evaporate. In the red state it tends to be a thick paste, but in the green state it will form long, thin, needle-like crystals.

Answer: K - Jay , it sounds like you had Wine Kraut . Its a mix of purple cabbage , wine , lemon juice , sugar and some butter and it all gets boiled together . I also add caraway seeds and bacon to mine .

Wine Kraut
1/4 c. butter
1/3 c. lemon juice
1/4 c. b.sugar
1/2 c. dry white wine
1/2 tsp. caraway seeds

4 c. shredded purple cabbage
2 med. apples , peeled , pared
In large saucepan , melt butter , stir in juice , sugar , water , caraway and salt . Add cabbage and apples ; bring to a boil .Reduce heat ; cover and simmer 25 - 30 minutes .
I like to add bacon that I have cooked and drained on paper towels ; then add to cabbage .

These look like cabbage roses on long stems with compact heads...much more compact than the ornamental cabbages/ kale

Answer: A small bit of romaine is fine. You might want to check on the purple cabbage. I know a bit of green is ok. The purple has an enzyme that causes problems with rats and guinea pigs, so I would guess it probably would effect gerbils and/or hamsters as well.
